Whether you’re planning a weekend getaway, hosting a garden party, or simply looking to unwind after a long week, my handpicked selection of spring cocktails will elevate your experience. From vibrant, fruity concoctions to crisp, herbal delights, these drinks are designed to capture the essence of spring in every sip. Get ready to shake, stir, and sip your way through my favourites that are perfect for any springtime occasion!

Lemon Blueberry Daiquiri

This brightly coloured daiquiri has major springtime vibes. Between the fruity sweetness of the berries and the bright, citrusy flavour, the rum tends to fade to the background, making these surprisingly drinkable despite the strength. (So please drink responsibly!)

Ingredients

FOR BLUEBERRY-LEMON SYRUP:

  • 1/2 c. granulated sugar
  • 1/2 c. water
  • 1 c. fresh or frozen blueberries
  • Zest of 1 medium lemon

FOR 1 DRINK:

  • Ice
  • 2 oz. light rum
  • 1 oz. freshly squeezed lemon juice
  • 3/4 oz. prepared simple syrup
  • Fresh blueberries, for garnish
  • Lemon peel, for garnish

  1. In a medium saucepan over medium heat, combine sugar and water and stir until sugar has dissolved. Add blueberries and bring mixture to a boil. Reduce heat and simmer until blueberries have burst, about 5 minutes.
  2. Remove from heat, stir in lemon zest, and let cool 10 minutes. Strain mixture into a clean jar and let cool to room temperature, about 20 minutes. (You will have enough blueberry simple syrup for at least 4 drinks.)
  3. Fill a shaker with ice. Add rum, lemon juice, and simple syrup and shake until chilled. Strain into a chilled coupe and serve garnished with blueberries and a lemon peel.

Coconut Pineapple Spritz

Are you craving a tropical vacation? This summer cocktail is for you. No matter the time of year, one sip of this coconut and pineapple spritz will transform your mindset to a tropical beach or beautiful sunny day, making this the perfect cocktail for any season. 

Ingredients

  • 1/2 c. small pineapple chunks, plus 1 pineapple wedge and 2 pineapple leaves
  • 1 Tbsp. packed light brown sugar
  • 1 1/2 oz. rum
  • Ice
  • 1 oz. coconut water
  • Seltzer water, for topping off
  • 1 lime wedge

Directions

  1. In a cocktail shaker, muddle pineapple chunks and brown sugar until pineapple is smashed to a puree and releases juices. Add rum, then fill cocktail shaker with ice. Cover and vigorously shake until outside of shaker is very frosty, about 20 seconds. Strain into a pint or highball glass, shaking and tapping shaker to ensure all liquid is strained.
  2. Fill glass halfway with ice and pour coconut water over. Top off with seltzer water. Squeeze juice from lime wedge into glass and drop wedge into glass. Garnish with pineapple wedge and leaves.

French 75

The French 75 is among the fanciest of cocktails. Sure, there’s the tried-and-true martini and the timeless Old Fashioned, but the French 75 has what those two don’t –Champagne! Only requiring four ingredients, this is the simple, classic cocktail to prepare when you need to add the fancy factor to any occasion. Bubbly, bright, and refreshing, we’ll toast to this cocktail any time of the year.

Ingredients

  • 1 1/2 oz. gin 
  • 3/4 oz. fresh lemon juice
  • 3/4 oz. simple syrup
  • 3 to 4 oz Champagne or other sparkling wine
  • 1 Lemon peel, for garnish

Directions

  1. Add gin, lemon juice, and simple syrup to a shaker filled with ice. Shake until completely chilled then strain into a champagne flute. Top with Champagne and garnish with a lemon twist.
